Our comprehensive 3-week curriculum covers everything you need to understand about the importance of sanitation in food, edibles and cannabis industries.

Module 1: Introduction to Sanitation Principles
  • Definitions and importance of sanitation
  • Cross-contamination risks
  • The role of sanitation in product safety and quality
Module 2: Microbiology for Sanitation
  • Common foodborne pathogens (e.g., Salmonella, E. coli, Listeria)
  • Microbial growth conditions
  • Biofilms and microbial harborage points
Module 3: Cleaning and Sanitizing Procedures
  • Cleaning vs. sanitizing vs. disinfecting
  • Steps in an effective sanitation cycle (pre-rinse, detergent, rinse, sanitize, etc.)
  • Dry vs. wet cleaning applications
Module 4: Chemical Safety and Handling
  • Types of cleaning agents and sanitizers
  • Safe storage and use of sanitation chemicals
  • WHMIS and SDS compliance
Module 5: Good Manufacturing Practices (GMPs)
